Design the two lines players see in the server list, with colours and bold, and copy it ready to use.

For a plain server, open server.properties, replace the motd line with the copy for server.properties, and restart. If you use a plugin that manages the server list, such as MiniMOTD, paste the plugin version with & codes into its config.
Click a colour to add it at the end of the line you are editing. The preview is a close approximation of how Minecraft draws the text; the final look depends on the game's font.
Questions
How do colour codes work?
A colour code is the section sign (§) followed by a letter or digit, such as §a for green or §l for bold. Many plugins and tools let you type & instead of §, which they convert for you. server.properties needs the real section sign, written as \u00A7.
How long can a MOTD be?
The server list shows two lines, and about 45 visible characters fit on each. Anything longer is cut off, and the exact room depends on the player's screen size and the characters you use.
Why does my colour reset after a bold code?
Choosing a new colour clears bold, italic and the other formats, just like in the game. Put the formatting code after the colour, such as &a&l for green bold.
Can I use hex or gradient colours?
Modern versions support full hex colours in some places, but a plain server.properties MOTD uses the 16 classic colours. Plugins such as MiniMOTD can show hex colours and gradients.
